Ingredients
Start here, then move straight into the method.
- Chicken breast, thinly sliced lengthwise
- Whole spices: bay leaves, cinnamon stick, cardamom pods
- Assorted bell peppers, sliced
- 1 medium onion, cut into wedges
- 1 cup fresh mushrooms, sliced
- 1/2 cup oil
- 1/2 tsp fajita seasoning
- 1/2 tsp seven-spice blend
- 1/2 tsp paprika
- 1/2 tsp black pepper
- A pinch garlic powder
- A pinch ground ginger
- 2 tbsp soy sauce
- Shredded mozzarella cheese
- Chopped lettuce
- Pickles
- Corn

Method
Follow the cooking sequence without leaving the page.
- Put the sliced chicken in a pan or skillet with the whole spices over the heat and cook, stirring, until the liquids evaporate.
- Remove and discard the whole spices, then add the oil, bell peppers, onion and mushrooms and sauté.
- Add the soy sauce and spices and stir, then reduce the heat and simmer for about 10 minutes or until cooked through.Timers: 10 min
- Sprinkle the mozzarella over the fajita mixture and wait for it to melt, then turn off the heat.
- Choose the bread you prefer. Spread the avocado sauce on the bread, then the fajita mixture, then a little corn, lettuce and pickles on top.
- Lightly toast the sandwiches on a pan or grill and serve.
