Lentil Soup with Lemon and Potatoes
Lentil soup with lemon is one of those easy, hearty soups. What do you add besides Swiss chard? Some people add potatoes, and carrots can also be added.
Ingredients
Start here, then move straight into the method.
- 1 bunch Swiss chard, washed and chopped (leaves and stems)
- 1/4 cup vegetable oil and 1/4 cup olive oil
- 1 large onion
- 1 medium potato
- 1 cup large white lentils
- 1 teaspoon salt, or to taste
- 1/2 cup lemon juice
Method
Follow the cooking sequence without leaving the page.
- In a pot over medium heat, add the vegetable oil and olive oil, then sauté the finely chopped onion until it softens and turns golden.
- Add the potato cut into small cubes and cook for just 2 minutes, then add the lentils after rinsing and draining them and stir briefly.Timers: 2 min
- Add plenty of water, about 2 liters, and stir.
- Add the chopped Swiss chard, salt, and lemon juice, then wait until the water comes to a boil. Lower the heat and let the soup simmer gently for at least 20 minutes.Timers: 20 min
- When the Swiss chard and lentils are well cooked, turn off the heat and serve the lentil soup with lemon.
