Easy Qatayef Batter
An easy, delicious, and tried-and-true qatayef batter recipe you can make at home with no trouble at all. The filling is up to you, depending on what you have on hand: pistachios, walnuts and sugar, or even cheese. Enjoy!

- 1 cup good-quality flour
- 1 teaspoon yeast
- 1 cup water
- 1/2 teaspoon sodium bicarbonate (baking soda)
- A pinch of salt
- 3 drops lemon juice
- 2 tablespoons warm water to dissolve the yeast
Method
- Dissolve the yeast in 2 tablespoons of warm water and set aside for ten minutes.
- Sift the flour, add a pinch of salt, then add the water and whisk gradually with a hand whisk until all the flour is incorporated.
- Add the yeast and whisk, then let it rest to rise and double in volume.
- When you are ready to cook the batter, add the baking soda and lemon juice.
- Pour a little of the batter into a non-stick pan in the form of circles. When they brown slightly, remove them and place them on a towel or damp cloth so they do not dry out.
