Ingredients

  • 1 cup good-quality flour
  • 1 teaspoon yeast
  • 1 cup water
  • 1/2 teaspoon sodium bicarbonate (baking soda)
  • A pinch of salt
  • 3 drops lemon juice
  • 2 tablespoons warm water to dissolve the yeast

Method

  1. Dissolve the yeast in 2 tablespoons of warm water and set aside for ten minutes.
  2. Sift the flour, add a pinch of salt, then add the water and whisk gradually with a hand whisk until all the flour is incorporated.
  3. Add the yeast and whisk, then let it rest to rise and double in volume.
  4. When you are ready to cook the batter, add the baking soda and lemon juice.
  5. Pour a little of the batter into a non-stick pan in the form of circles. When they brown slightly, remove them and place them on a towel or damp cloth so they do not dry out.
