How to Make Ka'ak al-Abbas
A delicious, easy, tried-and-tested homemade recipe for Ka'ak al-Abbas. Can be left plain or filled with ground dates. Known by several names, including “Thursday Ka'ak”.
How to make Ka'ak al-Abbas — a tasty, reliable home recipe
Ingredients
Start here, then move straight into the method.
- 1 1/2 cups flour
- 1/2 cup sugar
- 1 tablespoon sesame seeds (unroasted)
- 1 teaspoon ka'ak spice mix (a special blend used for ka'ak)
- 1 teaspoon nigella seeds (optional)
- 1/2 teaspoon 'aqda safra' (turmeric), or less to taste
- 1/4 tablespoon instant yeast
- 1/4 tablespoon mahleb (mahlab)
- 1/4 cup unsalted butter, melted
- 2 tablespoons sunflower oil
- 1/2 cup milk

Method
Follow the cooking sequence without leaving the page.
- Combine all dry ingredients. Add the melted butter and oil, then rub or pulse the mixture until it resembles coarse crumbs.
- Add 1/2 cup milk and knead into a dough.
- Let the Ka'ak al-Abbas dough rest for about 4 hours.Timers: 240 min
- After resting, divide the dough into round discs and shape them using ka'ak molds. You can leave them plain or fill them with date paste.
- Place the pieces on a baking tray and bake in a preheated oven at 180°C (about 350°F).
- When the bottoms are browned and the edges turn golden, brown the tops.
- Let Ka'ak al-Abbas cool to room temperature before serving.
- Note: This quantity is enough to make about 12 discs
