How to Make Qamhia (Wheat Pudding with Milk)

Qamhia with milk — a popular dessert often served on special occasions. Very nourishing and refreshing because it is served chilled.
Ingredients
Start here, then move straight into the method.
- 1 kg hulled wheat
- 1 kg powdered milk
- ½ kg sugar (or more to taste)
- ½ kg honey
- 1 can Nestlé sweetened condensed milk
- ground mastic
- orange blossom water and rose water
- Nuts for topping, as desired
Method
Follow the cooking sequence without leaving the page.
- Wash the wheat and soak it overnight.
- The next day, bring a pot of water to a boil, add the wheat, let it boil for 10 minutes only, then turn off the heat.Timers: 10 min
- Leave the wheat in that water for 4 hours so the grains open.Timers: 240 min
- After that time, return the pot to the heat and stir the wheat well until the grains are fully cooked.
- In a second pot, mix the powdered milk with 4 cups of water and stir until it boils.
- Once the milk mixture boils, pour it over the cooked wheat, then add the honey, the condensed milk (Nestlé), the sugar, and the ground mastic. Stir and simmer gently for 15 minutes. If the mixture becomes too thick, add more liquid milk and continue cooking as needed.Timers: 15 min
- Turn off the heat, add a splash of orange blossom water and rose water, and stir.
- Pour the wheat-and-milk pudding into serving glasses and let it cool.
- Garnish with nuts that have been soaked in water until softened and then drained.
- Serve the chilled qamhia straight from the refrigerator. You can also decorate with additional nuts when serving.
