Sfoof Tray (Sheet Sfoof)
A tray of sfoof answers endless family requests for sweets. Sfoof is quick, easy, and delicious — great for kids' school snacks or a last-minute dessert for guests.
Sfoof tray — a very tasty Arabic sweet loved by both adults and children
Ingredients
Start here, then move straight into the method.
- 2 cups flour
- 2 cups fine semolina or very fine semolina (”farikha”)
- 1 cup vegetable oil (or oil + ghee)
- 2 cups sugar
- 2 cups liquid milk
- 2 tsp saffron substitute (turmeric) or yellow food coloring
- 1 tbsp baking powder
- 1 tsp vanilla
- Tahini for greasing the pan
- Syrup (qatr) + 1 tsp ghee for glazing the top
- For garnish: sesame or nuts such as almonds, cashews, pine nuts, as desired

Method
Follow the cooking sequence without leaving the page.
- Sift the dry ingredients together and place them in a deep bowl.
- Dissolve the sugar in the milk with the turmeric (saffron substitute), then add the oil and stir. Pour this mixture over the dry ingredients and mix well.
- Grease the baking pan with tahini and pour in the sfoof batter.
- Garnish the top of the sfoof tray with nuts, then bake at 175°C for about 30 minutes or longer until cooked and golden.Timers: 30 min
- Remove the sfoof tray from the oven and glaze the top with syrup and ghee.
- Allow the sfoof tray to cool completely before cutting so it does not crumble.
