Barazek is one of the most famous Syrian and Levantine sweets. Do you like it with extra sesame? :) Try our guaranteed recipe.
Ingredients
- 3 cups flour
- Half a cup fine semolina
- 1 cup sugar
- 1 cup ghee
- 1/4 cup oil
- 1 small teaspoon mahlepi
- 1 small teaspoon baking powder
- 1 tablespoon yeast
- 3/4 cup cold water
- 2 cups toasted sesame seeds
- 1/4 cup syrup
- 1/4 cup water for the sesame mixture
- Pistachios (optional)
Method
- Whisk the oil, ghee at room temperature, and sugar together...
- Add the flour, semolina, mahlepi, and baking powder. Dissolve the yeast in the cold water, then start adding the water and knead.
- Cover the dough and leave it in the refrigerator for about two hours.
- Add the syrup and 1/4 cup water to the sesame seeds, mix, and set aside in a bowl.
- Spread the pistachios, crushed into small pieces without grinding, in a plate.
- After two hours, shape the dough into small balls and press each ball with your hand so the cookies take the desired shape.
- Coat or dip each piece in pistachios, then in the sesame mixture.
- Bake them in the oven on parchment paper for a few minutes and brown them.
- Let the barazek cool before serving.
