How to Make Jaz Maz
Jaz Maz is one of Syria's best-known dishes, and it is based on eggs and tomatoes. Some cooks like to add their own special touch, just like in this recipe!

Ingredients
Start here, then move straight into the method.
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1/4 cup olive oil
- 1 tomato, chopped
- 1 green sweet pepper, chopped
- Salt
- 1/4 teaspoon seven-spice
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1 tablespoon tomato paste
- 1/2 cup water
- 1/4 cup butter
- 6 eggs
- 1/2 cup mozzarella - optional
Method
Follow the cooking sequence without leaving the page.
- In a pan, add 1/4 cup olive oil and sauté the finely chopped onion and garlic until softened
- Add the tomato, chopped green sweet pepper, salt, and spices, and stir
- Once the vegetables have softened, add the tomato paste and water, stir, cover the pan, and let it cook over low heat for about 10 minutes until thickenedTimers: 10 min
- Meanwhile, in a second pan, heat and melt 1/4 cup butter, then add the beaten eggs with salt
- When the eggs are cooked, add them over the first pan and mix
- Add mozzarella on top and wait until it melts before turning off the heat
