Homemade Hareesa (Semolina Cake)

Homemade hareesa — a special recipe everyone loves. Despite its richness, it has a light texture, so you may find yourself eating more than one piece without feeling like you've had much :)

Homemade Hareesa: a tried-and-tested successful recipe

Ingredients

Start here, then move straight into the method.

  • 4 cups coarse semolina
  • 1 cup granulated sugar
  • 1 3/4 cups plain yogurt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 226 g unsalted butter, at room temperature
  • Syrup (Qatr / Sheera)
  • 5 cups granulated sugar
  • 2 1/2 cups water
  • 1 tbsp rose water
  • 1 tbsp orange blossom water
  • 2 tbsp lemon juice

Method

Follow the cooking sequence without leaving the page.

  1. Place the semolina, sugar, and butter in a bowl and rub them well until the semolina absorbs the butter.
  2. Leave them to rest for one hour.
  3. Meanwhile prepare the syrup: put the sugar and water in a pot over the heat until it boils, then add the lemon and keep it on the heat until you obtain a medium-thick syrup.
  4. Add rose water and orange blossom water, stir, and remove the syrup from the heat.
  5. After the dough has rested for an hour, add the baking powder and baking soda and knead.
  6. Begin adding the yogurt gradually and knead until you get a soft, loose dough.
  7. Spread the homemade hareesa dough in a pan greased with butter or tahini and cut it.
  8. Put it in the oven on the lower rack at 200°C until the edges turn brown, then brown the top.
  9. Remove the homemade hareesa from the oven and pour room-temperature syrup over it.
  10. Let it cool completely before cutting it again and serving it.
