Sfoof made with fine semolina — a successful, delicious recipe

Ingredients

  • 3 cups fine semolina ("tahneen al-farKha") or fine semolina
  • 1 1/4 cups warm milk
  • a dash of vanilla
  • 2 cups sugar
  • 1 teaspoon turmeric (for color)
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons melted ghee (samna)
  • pine nuts or almonds for garnish
  • tahini to grease the pan

Method

  1. Mix the sugar with warm milk, the bicarbonate, turmeric, baking powder and vanilla and stir well until the sugar dissolves
  2. Add the fine semolina gradually and stir with a whisk or hand whisk
  3. Grease the pan with tahini and pour the mixture into it
  4. Decorate the fine semolina sfoof pan with pine nuts or almonds, then put it in the oven at 180°C for half an hour
  5. Remove the sfoof pan from the oven and brush the top with ghee
  6. Let the fine semolina sfoof cool completely to room temperature before cutting and serving
