Sfoof made with fine semolina — a successful, delicious recipe
Ingredients
- 3 cups fine semolina ("tahneen al-farKha") or fine semolina
- 1 1/4 cups warm milk
- a dash of vanilla
- 2 cups sugar
- 1 teaspoon turmeric (for color)
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 2 tablespoons melted ghee (samna)
- pine nuts or almonds for garnish
- tahini to grease the pan

Method
- Mix the sugar with warm milk, the bicarbonate, turmeric, baking powder and vanilla and stir well until the sugar dissolves
- Add the fine semolina gradually and stir with a whisk or hand whisk
- Grease the pan with tahini and pour the mixture into it
- Decorate the fine semolina sfoof pan with pine nuts or almonds, then put it in the oven at 180°C for half an hour
- Remove the sfoof pan from the oven and brush the top with ghee
- Let the fine semolina sfoof cool completely to room temperature before cutting and serving
