Chocolate basbousa is a modern version of the famous Arabic basbousa dessert. Adding chocolate sauce turns it into a rich, distinctive new treat that satisfies our chocolate cravings.

Ingredients

  • 1 1/2 cups fine semolina mixed with coarse semolina
  • 1/2 cup flour
  • 1/2 cup shredded coconut
  • 1 cup sugar
  • 1 cup liquid milk
  • 3/4 cup oil
  • 3 tablespoons cocoa
  • 1 tablespoon instant coffee
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • A pinch of salt
  • Chocolate sauce:
  • 2 cups liquid milk
  • 1/2 cup sugar
  • 2 tablespoons cocoa
  • 1 tablespoon butter
  • 1 teaspoon cornstarch
  • 1 piece dark chocolate (optional)

Method

  1. Mix all the basbousa ingredients and whisk well to obtain a soft basbousa batter.
  2. Grease a baking tray with oil and pour in the mixture.
  3. Bake in a preheated oven at 180°C, placing it on the rack just below the middle. Bake for only 15 minutes. Check with a wooden skewer or knife before turning off the heat.

  4. Turn off the bottom heat, then switch on the top heat for 4 minutes only, and turn it off.

  5. While the basbousa is baking, prepare the chocolate sauce. Put the sauce ingredients in a saucepan over the heat and keep stirring until it boils.
  6. Remove the basbousa tray from the oven and cut it immediately while it is still hot, then pour the hot chocolate sauce over it.
  7. Let it cool completely until it reaches room temperature. It can be decorated with chocolate shavings, if desired.
  8. Serve at room temperature or chilled from the refrigerator.
