How to Make Eclairs
A very special and elegant way to prepare homemade eclair cake. This recipe is home-tested, but it does require some care and patience during the preparation stages.
Ingredients
Start here, then move straight into the method.
- 1 cup water
- 75 g butter or oil
- 1 cup flour
- A pinch of salt
- 3 or 4 eggs
- A pinch of vanilla
- Lemon zest
- Pastry cream *
- To prepare the pastry cream
- 2 cups milk
- 1/4 cup flour
- 2 eggs
- 1 tablespoon starch
- Vanilla
- 1/2 cup sugar
Method
Follow the cooking sequence without leaving the page.
- Mix the water and the butter or oil and place them in a pot over the heat and bring to a boil. Sift the flour and salt then add them to the water and butter all at once and stir quickly for one minute until a smooth dough forms...
- Set the dough aside to cool slightly, then add 3 or 4 eggs gradually as needed with the vanilla and lemon zest..
- Put the dough into a pastry bag and pipe it onto a sheet of parchment paper, then place the baking tray on the middle rack of a preheated oven at 200°C for 20 minutes...Timers: 20 min
- Do not open the oven during this time. Note that the main body pieces we leave for 20 minutes, while the neck, because it is thin, takes about 10 minutes and will not require much time in the oven and will cook quickly...Timers: 20 min, 10 min
- For preparing the crème pâtissière:
- 2 cups milk
