Mafroukah: a clear, delicious homemade recipe
Ingredients
- 1 cup sugar
- 1 cup hot water
- 1 cup fine semolina (also called "farakha" flour)
- 100 g ghee
- Qareesheh (strained cream) for topping
- Toasted nuts for topping
- Sugar syrup (shira) for serving

Method
- In a nonstick pan, melt the sugar until it dissolves and turns light brown
- Slowly add hot water over the sugar in the pan in batches, stirring until the sugar dissolves, then set aside
- In a second pan, toast the fine semolina until it takes a light color, then add the ghee and stir until they come together
- Add the dissolved sugar mixture over them and stir until they bind and form the brown Mafroukah dough
- Grease the serving plate with a little vegetable oil and spread the Mafroukah dough on the plate
- Spread qareesheh cream over the Mafroukah dough and scatter the fried nuts on top
- Serve the Mafroukah with syrup
