Sultan's Luqmat with Chocolate

- 4 cups water
- 3 cups powdered milk
- 1 cup sugar
- 1/2 cup flour
- 1/2 cup cocoa powder
- 3 tablespoons starch
- 2 tablespoons butter
- a dash of rose water
- grated coconut
- whipped cream or qaimar (clotted cream)
- Note:
- You can omit the cocoa in this recipe and prepare it in the traditional way to obtain the regular white Sultan's Bite.

Method
- Mix the water, sugar, powdered milk, flour, starch and cocoa while cold first before placing the mixture over low heat.
- Place the ingredients on the heat, stirring continuously until the mixture boils. Reduce the heat while continuing to stir and add the butter and rose water. When the mixture thickens, pour it into a tray generously sprinkled with grated coconut.
- Make sure that the layer of mixture placed in the tray is thin and even. Refrigerate it for at least two hours or until it sets well; preferably leave it overnight in the refrigerator.
- Afterwards add the whipped cream or qaimar on top of the chilled layer; you can sprinkle grated chocolate or ground pistachios over the cream. Return the Sultan's Bite to the refrigerator for about an hour so it cools well.
- Cut the tray across the width with a line down the middle, then cut lengthwise into rectangular strips so you can roll the mixture into rolls.
- Using a thin tool, roll the Sultan's Bite into rolls like Swiss roll. Place the Sultan's Bite rolls on a serving plate and sprinkle them with grated coconut or any other additional decoration as desired.
