- 1 kilogram semolina
- 200 grams butter
- 1 cup vegetable oil
- 1 teaspoon mahlab
- 1 teaspoon mastic
- A pinch of nutmeg
- 2 tablespoons ground anise
- 1 tablespoon ka'ek spice or spice mix
- 4 tablespoons sugar
- Date Filling:
- Knead the dates with vegetable oil, ka'ek spice, ground anise, and a pinch of fine cinnamon.
Method
- Combine all the ingredients together and mix well until they are fully absorbed, then leave them aside overnight.
- The next day, knead the mixture with warm milk. Use as much as the dough needs.
- Add the milk slowly and gradually, because the mixture will absorb it quickly. Continue adding warm milk until you have a smooth, soft, and cohesive dough.
