Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cake flour
  • 2 teaspoons sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon yeast
  • 1 tablespoon baking powder
  • 2 tablespoons cornstarch
  • 3 cups water
  • Filling for Qatayef pancake with cheese:
  • 1/2 kg Czech Akkawi cheese
  • 1/2 cup milk
  • 2 tablespoons fine semolina
  • orange blossom water
  • rose water

Method

  1. Mix all the ingredients and let the batter rest for half an hour...
  2. After the required time, heat a large nonstick skillet and pour a quantity of batter into the skillet over medium heat until the bubbles on the large circle disappear.
  3. Remove the large qatayef from the heat and set them aside... but cover them so they don't dry out and become hard; meanwhile prepare the filling.
  4. Place the cheese in water and change the water every hour until the salt is removed and it is no longer too salty.
  5. Put the cheese in a colander to drain, then place it in a pot with the milk, semolina, orange blossom water and rose water until you have a firm cheese mixture.
  6. Put the cheese filling between two qatayef pancakes and place the assembled pancake on a baking tray, put it in the oven at 180°C for about 12 minutes or until it browns and the cheese melts.

  7. Pour the sugar syrup (qatra) over them while still hot.
