How to Make Cheese-Qatayef Pancakes

- 2 cups all-purpose flour
- 1/2 cup cake flour
- 2 teaspoons sugar
- 1/2 teaspoon baking soda
- 1 teaspoon yeast
- 1 tablespoon baking powder
- 2 tablespoons cornstarch
- 3 cups water
- Filling for Qatayef pancake with cheese:
- 1/2 kg Czech Akkawi cheese
- 1/2 cup milk
- 2 tablespoons fine semolina
- orange blossom water
- rose water
Method
- Mix all the ingredients and let the batter rest for half an hour...
- After the required time, heat a large nonstick skillet and pour a quantity of batter into the skillet over medium heat until the bubbles on the large circle disappear.
- Remove the large qatayef from the heat and set them aside... but cover them so they don't dry out and become hard; meanwhile prepare the filling.
- Place the cheese in water and change the water every hour until the salt is removed and it is no longer too salty.
- Put the cheese in a colander to drain, then place it in a pot with the milk, semolina, orange blossom water and rose water until you have a firm cheese mixture.
- Put the cheese filling between two qatayef pancakes and place the assembled pancake on a baking tray, put it in the oven at 180°C for about 12 minutes or until it browns and the cheese melts.Timers: 12 min
- Pour the sugar syrup (qatra) over them while still hot.
