Ingredients

  • 2 cups flour
  • 2 tablespoons 'farikha' flour
  • 3 tablespoons cornstarch
  • a pinch of salt
  • water as needed
  • Remove the raqaq sheets and place them on a wide tray and put a lid on them immediately so they do not dry out.
  • You can shape and use the raqaq as desired or fill them with cream (qeshta) to make Zenoud El-Sit.

Method

  1. Mix the ingredients well until you get a smooth, homogeneous batter.
  2. Pour some of the batter into a wide pan in a thin layer for two minutes on each side.
  3. Lift the raqaqat and place them on a large tray, then cover them immediately so they do not dry out.
  4. You can shape and use the raqaqat as desired, or fill them with clotted cream to make Zenoud El-Sit.
