How to Make Madlouqa Dessert

Ingredients

  • 1 cup sugar
  • 1 and 1/3 cups water
  • A pinch of salt
  • 3/4 cup fine semolina, also called farina, or coarse semolina (coarse semolina is preferred)
  • 2 tablespoons butter
  • 2 tablespoons rose water or orange blossom water
  • 1 cup finely ground pistachios
  • 1/2 teaspoon green food coloring
  • Ashta for the topping
  • Qatar/syrup for serving

Method

Follow the cooking sequence without leaving the page.

  1. Put the sugar, water, and a pinch of salt on the stove and let them boil for five minutes.
  2. Add the butter, then the semolina in batches, stirring constantly until the mixture is uniform... if the mixture becomes thick, add just a little water and stir.
  3. Then add 1 cup pistachios and rose water or orange blossom water and mix to obtain a velvety-textured dough.
  4. Remove the dough from the heat and let it cool well.
  5. Spread the madlouqa dough in the serving dish, then add qashta (clotted cream) on top and garnish with any type of roasted or fried nuts as desired.
  6. Serve it with sugar syrup.
