- Half a kilo of mozzarella cheese or sweet akkawi cheese
- 1 cup fine semolina or farina semolina
- Half a cup syrup
- 3 tablespoons rose water
- 3 tablespoons orange blossom water
- Curd Cream:
- 2 liters milk, you can mix powdered milk + water
- Leave it in the sieve until all the water drains out, then mix it with a box of clotted cream or cream and a little orange blossom water
Method
- Put the cheese in a pot over medium heat and keep stirring until it melts well... add the syrup and stir, then add the rose water and orange blossom water and continue stirring..
- Add the semolina gradually and stir gently and quickly until all the ingredients are combined with the cheese and we get a soft, cohesive dough... if we need more syrup, we can add more..
- Brush with syrup and roll out the dough while it is hot until it becomes thin... fill it and roll it up into a roll or cylinder shape, then cut it as desired and garnish with pistachios. Put the remaining edges of the dough in a dish with cream
- Put them on the heat, and when the milk is very hot, add a small cup of vinegar.... the curds will begin to appear. Continue straining them with a sieve until the curds are finished and only the liquid remains.
