Ingredients

  • 1 cup strained orange juice
  • 1 1/2 cups fine semolina
  • 1/2 cup sugar
  • 1/2 cup shredded coconut
  • 2 tablespoons flour
  • 1/2 cup vegetable oil
  • 2 eggs at room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon baking powder
  • 4 tablespoons orange zest
  • Ingredients and method for the syrup:
  • 1 1/2 cups sugar
  • 2 1/2 cups water
  • 2 lemon slices
  • 2 orange slices
  • 2 drops orange blossom water

Method

  1. In a deep bowl, place the eggs, vanilla, and orange zest and whisk well...
  2. Add the sugar gradually and continue whisking
  3. Then add the vegetable oil in stages while continuing to whisk, and add the orange juice while whisking until the ingredients are incorporated
  4. Add the semolina, baking powder and flour to the rest of the ingredients and continue whisking until you get a cohesive batter
  5. You can add a little, about 3 additional tablespoons of semolina if the batter needs it
  6. Grease the pan with a little tahini and pour the batter into it evenly... Place the pan in a preheated oven at 180°C and brown it on the bottom and top until cooked...
  7. When you remove the basbousa from the oven, pour the cold syrup over it
  8. Stir the ingredients over low heat until the syrup thickens slightly. When it reaches the desired thickness, remove the syrup from the heat.
