How to Make Flemish Endive

A very easy way to prepare endive. Fried endive, in all its forms, is one of the tastiest and most nutritious appetizers, and it is suitable for anemia, in addition to its delicious flavor with a squeeze of lemon.

Ingredients

  • 2 kilograms endive
  • 3 large onions
  • Olive oil mixed with vegetable oil
  • Salt

Method

  1. Clean the endive from any impurities, wash it, then chop it coarsely
  2. Put a generous amount of water in a pot over high heat, and when it comes to a boil, add the endive and boil it until cooked through (about 15 minutes at most)

  3. Transfer it from the boiling water to cold water, then wash it and drain it well and squeeze it
  4. Slice the onions into wedges and fry them in the oil until golden
  5. Add the endive over the onions in the pan with a pinch of salt and stir for only 10 minutes
    Timers: 10 min
  6. Serve the endive with a squeeze of lemon, and eat it with Arabic bread
  7. Note: Do not cover the endive while cooking to preserve its green color
  8. Boil the endive in boiling water, and do not put the endive in the water before it boils so it keeps its green color
