Ingredients

  • 1 cup all-purpose flour
  • 3 cups fine semolina
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 cups liquid milk
  • 2 tablespoons baking powder
  • 2 small pinches turmeric
  • 3 tablespoons yogurt (to give Sfouf the tenderness you want)
  • A pinch of salt

Method

  1. Mix the semolina, flour, turmeric and baking powder well, then add the oil and mix the batter well with a wooden spoon...
  2. Dissolve the sugar in the milk and add it to the mixture, continuing to stir until a cohesive batter forms...
  3. Grease a baking tray with tahini and pour the batter in, then decorate as desired...
  4. Place the tray in a preheated oven at about 180°C for approximately 45 minutes...

  5. Let the tray cool before cutting; brush the surface with syrup and sprinkle sesame seeds and anise to taste
