Recipe story

This very clever homemade fake Aleppo pistachio recipe offers a low-cost alternative to green Aleppo pistachio! If nut prices have gone up, that doesn't mean you have to give up decorating desserts with them. Join us to learn how to turn peanuts into an Aleppo pistachio substitute :)

Ingredients

  • 1 kilo peanuts
  • 1 tablespoon green food coloring
  • 1/4 cup rose water
  • Also from Fatima's wonderful recipes that can be decorated with fake pistachio as an Aleppo pistachio substitute, here is Ashta Rolled Kunafa

Method

  1. Soak the peanuts with the food coloring, rose water, and just a little water in a bowl for 4 hours or overnight.
    Timers: 240 min
  2. The next day... drain the peanuts well.
  3. Place them in a food processor and chop coarsely, not finely.
  4. Spread the green chopped peanuts in a baking tray lined with parchment paper and place the tray in the oven for about 15 minutes only.
    Timers: 15 min
  5. Remove the tray from the oven and set it aside for 2 hours before putting the pistachios back in the electric machine and grinding them well... You can keep it as is, or leave some of it coarse, according to preference.
    Timers: 120 min
  6. Store the fake Aleppo pistachio in an airtight jar.
  7. Note: If you find the pistachio too green and prefer a lighter color, you can grind some more peanuts and add them... You can also add a teaspoon of Aleppo pistachio essence, if available (optional)
