Oven-Baked Sardine Tray
Oven-baked sardines — easier and healthier than frying. Sardines are a seasonal, very nutritious small fish. Serve with a squeeze of lemon or tartar sauce and eat with bread.

Ingredients
Start here, then move straight into the method.
- 1 kg sardines, cleaned and washed with water, lemon and salt
- 1 chopped onion
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup water
- 1 tsp hot chili powder
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp fish seasoning
- 1/2 tsp cumin (whole or ground)
- 1/2 tsp seven-spice blend
- 1/2 tsp black pepper
- Cherry tomatoes — optional
Method
Follow the cooking sequence without leaving the page.
- In a bowl, mix the chopped onion, oil, lemon juice, salt and spices.
- Season the sardines with this mixture and let them soak for about 1 hour.Timers: 60 min
- After an hour or longer, place the sardines in the oven tray with the cherry tomatoes and cover the tray with aluminum foil.
- Set the oven to top and bottom heat and bake in a preheated oven at 200°C (392°F) for about 40 minutes.Timers: 40 min
- Remove the aluminum foil and brown the sardines on top for about 10 minutes, or until nicely browned, then serve hot.Timers: 10 min
