Authentic Garlic Sauce

Ingredients

- 25 garlic cloves
- 1 tablespoon salt
- 3 tablespoons lemon juice
- 1 1/2 cups vegetable oil
- 1/2 cup yogurt

Method
Follow the cooking sequence without leaving the page.
- In the food processor place the garlic and salt and grind until you have a very smooth mixture
- Add the lemon juice to the garlic in the food processor
- Continue grinding and crushing the garlic with the lemon juice, then add the oil gradually on a very low speed
- Increase the food processor speed and add the oil gradually in a thin stream until all the oil is used
- Add the yogurt and process again, then transfer to an airtight glass jar and refrigerate for one week
- Note: The oil must be added in a thin stream; otherwise the mixture will not thicken and will become runny
- Shelf life: 3 months in the refrigerator
