Homemade Sfoof

Ingredients
Start here, then move straight into the method.
- 2 cups sifted all-purpose flour
- 2 cups fine semolina (or fine semolina flour)
- 2 cups water
- 1 cup vegetable oil
- 2 cups sugar
- 4 tablespoons powdered milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1½ teaspoons turmeric or yellow food coloring
- Butter or syrup (qatar/shira) to brush the sfoof
Method
Follow the cooking sequence without leaving the page.
- Sift the flour into a deep bowl, add the fine semolina, then the sugar, baking powder, vanilla, turmeric and powdered milk. Mix all the dry ingredients together.
- Add the oil and mix, then add the water and whisk well with a hand whisk.
- Let the batter rest for about an hour so the fine semolina swells slightly.
- Grease a baking tray with tahini (or butter), pour in the sfoof mixture and decorate with nuts.
- Place the tray in a preheated oven on the middle rack at 180°C (350°F).
- When the edges turn golden and the sfoof is cooked, turn the oven to the top broil to brown the surface.
- Brush the top with a little butter before browning so the sfoof takes on a nice color and stays moist. You can also brush the top with a little syrup for a shiny finish.
- Serve the sfoof when it has cooled.
