Date and biscuit Swiss roll... you may not have heard of this recipe before! Naturally, the familiar Swiss roll is made with chocolate, cream, or jam... but here we have a brand-new recipe, and a successful one too.

Ingredients

  • Biscuit dough:
  • 400 g biscuits
  • 1/2 cup shredded coconut
  • 1 x 120 g can of qeshta cream
  • 2 tbsp butter
  • 1/2 cup cold liquid milk
  • Date dough:
  • 800 g pitted mashed dates
  • 2 tbsp butter, at room temperature
  • 2 tbsp orange blossom water
  • 3 tbsp toasted sesame seeds
  • For decoration:
  • Sesame seeds
  • Shredded coconut
  • Pistachios

Method

  1. First, make the biscuit dough... using an electric mixer, grind the biscuits, then add the coconut, cream, butter, and cold liquid milk. Knead until the dough comes together and is well combined.
  2. Place the biscuit dough between two sheets of parchment paper and roll it out with a rolling pin into a rectangle.
  3. Second, prepare the date dough... knead the mashed dates with the butter, orange blossom water, and sesame seeds until the dough comes together and is well combined.
  4. Also place it between two sheets of parchment paper and roll it out into a rectangle the same size as the first one.
  5. Remove the parchment paper from the top of the date dough and place the biscuit dough over the date dough, then cover them with the parchment paper.
  6. Using the rolling pin, roll them out gently and lightly so the two doughs stick together without blending into each other.
  7. Remove the top sheet of parchment paper and discard it... then, using the bottom sheet, roll everything into a log.
  8. Finally remove the paper and decorate the date and biscuit Swiss roll as desired, then cut into cylinders or slices of the thickness you want... You can also refrigerate it for a while so it firms up more.
