Chocolate Head
We have long refrained from using the name "Head of the Slave," believing that this term is outdated and carries, even if unintentionally, racist connotations that we and our site and followers want no part of. We therefore decided to rename this recipe: "Chocolate Head."
Ingredients
Start here, then move straight into the method.
- 3 egg whites
- 1 1/4 cups sugar
- A pinch of salt
- About 1/4 cup water
- 2 drops white vinegar
- Dalal Kh
Method
Follow the cooking sequence without leaving the page.
- We put the water with the white vinegar and stir a little, then add all the other ingredients and beat with an electric mixer at medium speed until the sugar dissolves.
- When the sugar has dissolved, we place the cream that has formed over steam and beat for about four more minutes.
- Then we continue beating on high speed without steam this time, but for longer, up to about twenty minutes, and that is how the cream is ready.
- We put the cream in a piping bag, then begin placing a little of it vertically on a plain biscuit (an unfilled biscuit), then dip the cream from the top in the melted chocolate.
- The chocolate can be melted over a hot bain-marie, adding a tablespoon of vegetable oil to the chocolate pieces.
