Maajouqa with Cheese (Maajouqa)
Maajouqa is a well-known traditional treat in Tripoli, northern Lebanon. It doesn’t require many ingredients or much time to make, but its taste and aroma linger in children’s memories for years.
Ingredients

- Half a kilogram of mozzarella cheese, or sweet akawi, or sweet cooking cheese
- One and a half cups of semolina
- Orange blossom water and rose water
- Powdered sugar for garnish
Method
Follow the cooking sequence without leaving the page.
- Cut the cheese and put it in an ovenproof tray under the top heat, stirring until it melts.
- Add the semolina over the cheese in batches while continuing to stir over the heat.
- Stir continuously, kneading with a large spoon or a flat spatula until you have a cohesive dough; add the orange blossom water and rose water, then cut it or serve it in sandwiches or as pastries. Sprinkle with powdered sugar and serve hot.
