Khabeesa with Mastika
A delicious, very easy Beirut dessert. Khabeesa with mastika uses few ingredients already found in most homes, making it simple and affordable to prepare.
Ingredients

- 5 cups water
- 1 cup starch (corn starch)
- 1 1/2 cups sugar
- 1 tablespoon ground mastic (mastika)
- 1 tablespoon orange blossom water
- 1 tablespoon rose water
- Almonds
- Walnuts
Method

- Mix water and starch in a bowl until fully dissolved. Strain the mixture to remove any lumps, then place it in a pot over medium heat...
- Continue stirring continuously to prevent lumps. When the mixture turns from white to clear and begins to thicken, add the sugar (you can adjust sugar to taste).
- Stir well and quickly, then cook over medium heat for about half an hour. Grind the mastika and add it to the khabeesa with the orange blossom water and rose water, and add the almonds or walnuts as desired.
- Allow the mixture to cook for about five more minutes on the heat. Finally, pour into a serving dish and refrigerate... khabeesa is served cold, cut into squares.
