Maha Eye Cookies
Maha Eye Cookies are a beautiful Arabic sweet in both appearance and taste. Named for their eye-like shape, they’re popular and made from widely available ingredients.

Ingredients
Start here, then move straight into the method.
- 1 cup fine semolina
- 1 cup flour
- 3 tbsp desiccated coconut
- 1 tsp dry yeast
- 1 1/2 tsp baking powder
- 1 cup butter, at room temperature
- 1/2 cup milk
- 1/2 cup oil
- 2 tbsp sugar
- Syrup or sugar syrup (qatra), a little
- Desiccated coconut for topping

Method
Follow the cooking sequence without leaving the page.
- Mix all the dry ingredients and other ingredients together, except for the syrup. Knead to form the Maha Eye Cookies dough.
- Let the dough rest for about half an hour.
- After resting, shape the dough as you like — preferably in the traditional “Maha eye” shape. See the picture for reference.
- Place the shaped cookies on parchment paper on a baking tray.
- Bake on the middle rack at moderate temperature until lightly golden.
- Brush the hot cookies with syrup (qatra) using a pastry brush and sprinkle desiccated coconut on top.
- Serve the Maha Eye Cookies after they cool.
