Arabic Safuf Cake (Light Semolina Cake)
Safuf is a light, popular Arabic sweet that’s easy to prepare. Brushing the top with syrup gives it the required shine and softness.

Ingredients
Start here, then move straight into the method.
- 1 cup fine semolina
- 1 cup all-purpose flour
- 2 tablespoons butter at room temperature, or ghee + butter
- 1 cup milk
- 1 cup syrup (qatir / shira)
- 1/2 to 3/4 cup sugar, to taste
- 1 teaspoon yellow food coloring or turmeric
- 1 teaspoon baking powder

Method
Follow the cooking sequence without leaving the page.
- Mix all the ingredients thoroughly until the sugar dissolves and the batter is uniform.
- Grease a baking tray with a little tahini and spread the Safuf mixture evenly in the tray.
- Garnish with nuts as desired.
- Bake in a preheated oven at 170°C (top and bottom heat) until the cake is cooked.
- When you remove the tray from the oven, brush the top with syrup to give it shine and moisture.
- Serve the Arabic Safuf when it has cooled.
