Khabisa (Beirut-style) — a simple, traditional sweet from Beirut :)

Ingredients

  • 4 cups water
  • 1 cup cornstarch
  • 1 1/2 cups sugar
  • 3 tbsp rose water
  • 3 tbsp orange blossom water
  • 4 pieces of mastic, crushed with a pinch of sugar
  • nuts (or dried fruit) to taste — soaked for 1 hour

Method

  1. Mix the cornstarch, water, sugar, orange blossom water and mastic; dissolve them together in cold water
  2. Put them in a pot over medium heat and stir until they thicken
  3. Then add the nuts after draining them well and stir
  4. Pour the khabisa into the serving dish and let it cool
  5. When the khabisa has cooled completely to room temperature, cut it and serve
