Ingredients
- 100 g butter
- 1/2 cup vegetable oil
- 1/2 cup yogurt
- 2 eggs
- 1/2 cup coarse semolina
- 3 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- A pinch of salt
- A squeeze of lemon juice
- Filling:
- 1 cup ground walnuts
- 2 tbsp shredded coconut
- Syrup:
- 3 cups sugar
- 3 cups water
- 2 tbsp lemon juice or 1/4 tsp citric acid
- 1 tbsp rose water
- Dough:
Method
- First, prepare the syrup so it can cool completely before using it. Place the sugar and water in a pot over the heat until the water begins to boil.
- Add the lemon juice and let the syrup boil for 7 to 8 minutes over low heat.Timers: 8 min
- Add 1 tablespoon of rose water, stir, and turn off the heat.
- Add the semolina and stir, then set aside 1/2 cup of the flour and add the remaining flour to the dough along with the baking powder, baking soda, and 1 tablespoon of lemon juice, and mix well.
- Bring the dough together without kneading. If it needs more flour, add some of the reserved 1/2 cup gradually. You should end up with a soft dough that does not stick to your hands.
- Let the dough rest for just 10 minutes, then shape it into small balls.Timers: 10 min
- Flatten each ball in the palm of your hand and fill it with the walnut and coconut mixture, then seal and shape as desired.
- Arrange the pieces on a baking tray, leaving space between them.
- Bake the Turkish walnut dessert on the rack below the middle at 200°C until the pieces take on a beautiful color.
- Turn off the bottom heat and turn on the top heat slightly as well. Baking will take about 20 minutes maximum.Timers: 20 min
- Remove the tray from the oven and pour the cold syrup over the pieces, then turn them several times from time to time so they absorb all the syrup.
