Basbousa with Custard
A wonderful dessert that combines semolina cake with a custard filling. Try this version of basbousa with custard for your guests and tailor it to your liking.
Ingredients

- 2 cups semolina
- 2 1/2 cups shredded coconut
- 1 tablespoon baking powder
- 1 egg
- A pinch of vanilla
- 1/2 cup plain yogurt
- 1/2 cup milk
- 1/2 cup vegetable oil
- Syrup
- Custard mix *
- Custard
- 4 tablespoons custard powder
- 4 tablespoons sugar
- 4 cups water
- 10 tablespoons powdered milk

- Mix the dry ingredients first: semolina, coconut, and baking powder...
- In another bowl whisk the egg with vanilla and sugar until creamy, then add the yogurt and milk and continue whisking. Add the oil and whisk well.
- Add the dry mixture to the wet and mix well. Pour the batter into a baking tin greased with butter and dusted with flour.
- Place the tin in a preheated oven on the middle rack. Bake until done.
- Once baked, drizzle with syrup and pour over the custard mixture, then decorate as desired...
