Nammoura with Sweetened Condensed Milk

Ingredients
Start here, then move straight into the method.
- 1 kilo coarse semolina
- 1 can sweetened condensed milk (350 g)
- 2 1/4 cups yogurt
- 1 cup sugar
- 1 teaspoon baking powder
- 5 tablespoons powdered milk
- 1 1/2 cups melted ghee
- Orange blossom water
- Prepared syrup, already cooled and set (shira)
Method
Follow the cooking sequence without leaving the page.
- We put the dry ingredients in a bowl, then add the ghee and mix well with a wooden spoon...
- Then we add the can of condensed milk and keep mixing, then add the orange blossom water... If we have orange blossom essence, we add just a few drops. If we are using liquid orange blossom water, we add a small half cup instead of the extra half cup of yogurt.
- At this stage, add the yogurt gradually. You may use a little less or a little more, depending on the quality of the semolina and how much it needs.
- Mix the mixture very well by hand until we get a soft, cohesive dough.
- Grease an oven tray with a little oil and divide the dough into several sections in the tray so it is easier to spread. Then smooth it well with an oiled metal spoon... then cut the nammoura with a knife and decorate it with almonds, cashews, or pistachios as desired.
- Place the nammoura tray in a preheated oven. Put it in the middle rack with the heat coming from the bottom only. When it starts to turn golden at the edges after about half an hour, start browning it from the top until it becomes lightly golden, then pour the warm syrup (shira) over it. You can use 4 to 5 cups of syrup, depending on preference.
- Return the tray to the oven for a few minutes.
