Easy namoura— a tried-and-true homemade recipe

Ingredients

  • 3 cups semolina
  • 1 cup sugar
  • 1/2 cup sugar syrup (qater/shira)
  • 1/2 cup desiccated coconut
  • 1/2 cup melted ghee (samna)
  • 2 cups plain yogurt
  • 1/2 cup milk
  • 1/2 teaspoon baking soda

Method

  1. Mix all the ingredients together; you will get a soft dough. Let it rest for two hours.
  2. Place the dough in a baking pan and smooth the surface. Turn on both bottom and top heat at the same time, then place the pan into the hot oven at 200°C.
  3. When the edges brown and the easy namoura becomes golden, pour the cold syrup over it.
  4. Set it aside to cool completely before cutting and serving.
  5. Garnish the easy namoura with nuts as desired.
  6. Mix two large cups of sugar with one cup of water and one teaspoon of lemon juice.
  7. Put them in a pot over heat and let them boil for about 7 minutes.
    Timers: 7 min
  8. Add one tablespoon of orange blossom water and remove the syrup from the heat.
