Cream-Filled Cookies

A light and easy dessert to prepare... sure to be loved by both adults and kids.

Ingredients

Start here, then move straight into the method.

  • 1 1/4 cups sugar
  • 1/4 cup water
  • 3 egg whites
  • 2 drops of vinegar
  • pinch of salt

Method

Follow the cooking sequence without leaving the page.

  1. Begin by placing two drops of vinegar in the water, then add all ingredients and continue beating until the sugar dissolves completely, about five minutes...
  2. Meanwhile, in a pot on the stove, bring a small amount of water to a boil. When the water boils, take the whipped mixture and place the bowl over a heatproof setup (double boiler).
  3. Continue whisking over the steam (bath of water) until you obtain a cream-like mixture... whisk for about 7 minutes... then remove from heat and whisk vigorously for about 15 more minutes until the cream thickens well.

  4. Place the filling in a pastry bag and fill plain cookies by placing a bit of cream on top of a plain biscuit, then another biscuit, and so on until the amount is finished...
