Fried Eggplant with Cauliflower and Tomatoes

- Ingredients for the fried tomato:
- 2 large ripe tomatoes
- 1 clove garlic, crushed
- olive oil
- black pepper
- hot pepper or chili to taste
- Method for preparing the fried tomato sauce:
- Wash the two tomatoes and grate them using a hand grater, then add the crushed garlic and sauté them in olive oil, stirring with a pinch of salt, pepper, and hot pepper to taste until the mixture thickens, then remove from the heat.
- Cauliflower:
- Medium-sized cauliflower: remove the outer leaves and cut into small florets, wash them well with water and salt and leave them in a colander to drain the washing water...
- You can also dip the cauliflower pieces in flour before frying or fry them directly in hot deep oil; serve with lemon and tahini or tartar sauce, which is tahini thinned with a little water, lemon juice, garlic, and salt.

- First, wash the eggplant and peel it while leaving a little skin so the piece stays intact...
