  • 2 large eggplants
  • flour
  • breadcrumbs or crushed crackers
  • salt
  • oil for frying
  • cauliflower
  • Ingredients for the fried tomato:
  • 2 large ripe tomatoes
  • 1 clove garlic, crushed
  • olive oil
  • black pepper
  • hot pepper or chili to taste
  • Method for preparing the fried tomato sauce:
  • Wash the two tomatoes and grate them using a hand grater, then add the crushed garlic and sauté them in olive oil, stirring with a pinch of salt, pepper, and hot pepper to taste until the mixture thickens, then remove from the heat.
  • Cauliflower:
  • Medium-sized cauliflower: remove the outer leaves and cut into small florets, wash them well with water and salt and leave them in a colander to drain the washing water...
  • You can also dip the cauliflower pieces in flour before frying or fry them directly in hot deep oil; serve with lemon and tahini or tartar sauce, which is tahini thinned with a little water, lemon juice, garlic, and salt.

Method

  1. First, wash the eggplant and peel it while leaving a little skin so the piece stays intact...
  2. Arrange the eggplant pieces on a long tray, sprinkle them with a little salt, and leave them for at least half an hour so the moisture drains from the eggplant...
  3. Then prepare kitchen paper and blot the pieces dry, and begin dipping the eggplant pieces in flour and breadcrumbs...
  4. Heat plenty of oil and start frying the eggplant pieces, then place them on paper towels to absorb the oil and let them cool or serve hot according to preference with lemon and the fried tomato....
