The Best Maghli (Caraway Pudding)

Ingredients
Start here, then move straight into the method.
- 1 cup ground rice
- 1 cup sugar
- 8 cups water
- 1 tablespoon finely ground caraway
- 3/4 tablespoon ground cinnamon
- Garnish
- Raw nuts, soaked in water for at least 2 hours
- Grated (or desiccated) coconut
Method
Follow the cooking sequence without leaving the page.
- Mix the ingredients cold — it’s best to sift the spices before adding them. Then place the mixture on the stove and cook, stirring, for 2½ hours.
- Keep the pot over low heat and stir. You can place a wire trivet or heat diffuser under the pot so you don’t have to stir constantly; then stir only occasionally.
- Pour the maghli into serving glasses and let them cool completely without covering.
- Garnish with the drained, thoroughly dried nuts and grated coconut, then serve at room temperature or chilled from the refrigerator.
