Ingredients

Start here, then move straight into the method.

  • 1 kilo flour, minus half a cup, or 6 cups flour
  • Half a cup fine semolina, also known as fine flour
  • 1 cup sugar
  • 1 cup olive oil
  • 1 cup ghee and butter, meaning half a cup of each
  • 2 tablespoons ka'ak spice
  • 1 tablespoon finely ground fennel
  • 1 tablespoon finely ground anise
  • 1 tablespoon mahleb
  • 2 tablespoons nigella seeds, also known as black seed
  • Half a cup toasted sesame seeds
  • 2 and 1/4 cups lukewarm milk for kneading
  • or
  • 4 tablespoons powdered milk + 1 and 1/4 cups water
  • 1 tablespoon yeast
  • Filling
  • Half a kilo pitted dates
  • Fennel
  • Anise seeds
  • 1 tablespoon ghee
  • A splash of orange blossom water and a splash of rose water

Method

Follow the cooking sequence without leaving the page.

  1. Sift the flour first, then add the rest of the dry ingredients and mix.
  2. Heat the oil and ghee well, then add them to the dry ingredients.
  3. Mix first, then knead until you get a soft dough that does not stick to the hands.
  4. Let the dough rest for one hour. Cover it and leave it in a warm place.
  5. Meanwhile, prepare the date filling: add the desired flavorings and the ghee to the pitted ground dates and knead well.
  6. Shape the dates into thin sticks slightly smaller than the dough pieces you plan to shape, so the dough will fit around the date sticks.
  7. Roll the dough into small pieces, flatten them, place the date sticks inside, and wrap the dough around them, sealing the edges together to form bracelet shapes.
  8. Repeat with all the dough pieces and date sticks until you use up the quantity.
  9. Arrange the pieces on a baking tray, turn on the oven from both top and bottom, and bake for about 6 minutes only, or a little longer depending on the oven.

  10. Serve the date bracelets at room temperature.
