Pistachio mafroukeh — a very popular sweet during the holy month. Here’s how to make it

Ingredients:

2 cups pistachios (shelled) 1 cup powdered (confectioners') sugar 3 cups shredded kunafa (kataifi) 2 tablespoons melted butter 1 teaspoon green food coloring 1/4 to 1/2 cup sugar syrup (qatir/shira), as needed Qareesheh cream (curd-style cream): 1 liter milk 2 tablespoons white vinegar 1 tablespoon plain yogurt 1 tub Qaimar cream (optional) a splash orange blossom water a splash rose water

Preparation:

Place the 2 cups pistachios and 1 cup powdered sugar in a food processor and grind together.
Add the shredded kunafa, melted butter and green food coloring, and continue processing while the machine runs.
Add the sugar syrup as needed until the mixture becomes sticky.
Press the pistachio mixture into the serving plate and spread the prepared or previously made Qareesheh cream over it.
Garnish the pistachio mafroukeh with toasted nuts and serve with extra syrup.

How to make the Qareesheh cream:

Put the milk in a pot over the heat.
When it starts to boil, add the vinegar and yogurt — the milk will curdle.
Let it boil for 2 minutes, then strain it.
When the curds are well drained, add the ready-made Qaimar cream (if using), rose water and orange blossom water, and stir until the cream is smooth and combined.
Chill in the refrigerator before using.
