Dough for the maamoul

1½ kg fine semolina500 g coarse semolina750 g ghee (clarified butter)1 teaspoon mahleb (mahlab)1 cup rose water½ cup orange blossom water1 cup powdered (confectioners') sugar1 cup powdered milk½ teaspoon yeast dissolved in ¼ cup warm water

Step 1

We mix the dry ingredients then add the wet ingredients except rose water and orange blossom water... knead and rub the mixture together then let the dough rest overnight
