Stuffed zucchini and eggplant is one of the tastiest dishes we’ve loved since childhood ... perhaps because kids especially love the taste of stuffed zucchini! Who loves this recipe? We have a very delicious version.

Ingredients:

2 kg zucchini 2 kg small eggplant, or long eggplant suitable for stuffing 1 kg tomatoes, grated or blended in a blender Black pepper Salt 4 cups short-grain rice 1 cup pine nuts, fried in a little butter 1 kg minced meat A few cloves of garlic A few sprigs of fresh coriander

Method:

Wash the zucchini and eggplant, then core them to remove the flesh.
In a bowl, mix the washed and well-drained rice with the minced meat, fried pine nuts, salt, and a pinch of pepper, then mix until the stuffing is combined.
Stuff the zucchini and eggplant with this filling, leaving the opening of each piece empty by about 1 cm so the rice has room to expand and the pieces do not break during cooking.
Put the tomatoes with enough water to cover the zucchini and eggplant, and place them in a separate pot over the heat until the sauce comes to a boil.
Add the zucchini and eggplant to the sauce, and leave the pot over low to medium heat until the zucchini and eggplant are cooked through.
Saute the pounded garlic with the chopped coriander in a little oil until the mixture wilts, then add it over the pot of stuffed vegetables just a few minutes before removing it from the heat.
Once the stuffed vegetables are cooked, remove the zucchini and eggplant from the sauce or broth so the pieces do not fall apart from the heat, and pour the sauce into a separate bowl.
