Ingredients:

1/2 kg ground beef

\r\n

3 medium onions

\r\n

1 teaspoon garlic powder

\r\n

1/2 teaspoon ground cumin

\r\n

1 tablespoon seven-spice mix

\r\n

a pinch of cinnamon

\r\n

1 tablespoon flour

\r\n

1 tablespoon vegetable oil

\r\n

1 tablespoon soy sauce, to taste

\r\n

1 cup mozzarella cheese, shredded

\r\n

4 large ripe tomatoes

\r\n

2 tablespoons tomato paste

\r\n

a pinch of black pepper

\r\n

a pinch of hot pepper, to taste

\r\n

salt to taste

\r\n

2 cinnamon sticks or cloves

\r\n

2 bay leaves

\r\n

\r\n

Method:

\r\n

Finely chop one onion and mix with the minced beef along with garlic powder, cumin, seven-spice, cinnamon, flour, oil and soy sauce.

\r\n

Knead well to form a cohesive kebab mixture.

\r\n

Shape the kebab into medium balls, hollow the center of each, fill with mozzarella, and carefully seal to form round discs.

\r\n

Place the kebabs in a baking tray with onion slices and a sauce made from grated tomatoes, tomato paste, black pepper, hot pepper, salt, and 1 cup water and flavorings.

\r\n

Cover the tray with aluminum foil and bake until the kebabs are cooked.

\r\n

Serve the cheese-stuffed kebabs with white rice or saffron rice.
