2 kg yogurt, preferably goat yogurt

2 cups water

\r\n

1/2 cup Egyptian rice

\r\n

salt

\r\n

garlic

\r\n

dried mint

\r\n

pine nuts, to taste

\r\n

Kibbeh grilled *

Preparation:

Mix the yogurt with water and the washed, drained rice...

\r\n

Set the mixture over high heat... when the yogurt boils, reduce the heat and add minced garlic, to taste. Also add a pinch of salt...

\r\n

Grill the kibbeh in the oven for about 10 minutes...

\r\n

Add the grilled kibbeh on top of the yogurt mixture and simmer until the dish is cooked and the sauce thickens. Spoon the kibbeh in yogurt into serving bowls and garnish with fried pine nuts and dried mint...

If using cow’s milk yogurt for Kibbeh in yogurt, add two tablespoons of starch and continue stirring to prevent lumping or curdling...
