Zalabia (Fried Dough) Recipe
Zalabia — one of the tastiest and easiest pastries to make. Serve at breakfast with labneh or as a sweet with sugar or syrup. This version is flavored with anise.
Zalabia... an old, simple recipe with great popularity
Ingredients
Start here, then move straight into the method.
- 1 kg sifted flour (whole wheat or white)
- 2 cups sugar (or more to taste)
- 1 teaspoon ground anise
- 1 teaspoon whole anise seeds
- A pinch of ground nutmeg
- A pinch of ground cloves
- 1 cup sesame seeds
- 1 tablespoon instant yeast
- Warm water as needed (about 3 cups)
Method
Follow the cooking sequence without leaving the page.
- Mix the dry ingredients, then gradually add water and knead.
- You should get a cohesive but soft dough; oil your hands so the dough doesn’t stick.
- Let the zalabia dough rise for about two hours.
- Heat plenty of oil. Take small pieces of dough, shape them lengthwise and make a hole in the middle with your finger.
- Drop the dough into the oil and fry until golden to brown.
- Remove the zalabia from the oil and place on napkins to drain.
- Let cool and serve cold.
- Serve zalabia at breakfast or dip in sugar or pour syrup over them when serving.
