How to Make Mini Medlouka or Medlouka Cups

A wonderful recipe and a new, creative way to serve medlouka. You can make mini medlouka with an open top or seal it to look like babka ram, and in either case it looks very elegant for serving guests.

1 cup fine semolina1 cup sugar syrup2 medium tablespoons butter or ghee1 cup water, or as needed for the mixtureGround pistachiosOrange blossom waterRose waterGreen food coloring or dye

Homemade qashta or cream

3 liters liquid milk1/2 cup white vinegar1 can ready-made qashta creamA splash of rose waterA splash of orange blossom water1 cup liquid milk, 1 tablespoon cornstarch, 1 tablespoon sugar

Method for the cream

Bring the milk to a boil, and when it comes up to a boil, add the vinegar so it curdles and you get a mixture like curds. Place it in a strainer to remove the liquid. Add the ready-made qashta to the mixture with the rose water and orange blossom water.

Put the butter or ghee in a wide pan over the heat and add the fine semolina, stirring for a while; then add the syrup and stir, then add the water and pistachios — you can add 1 cup or 1/2 cup pistachios according to taste.
