Ingredients:

3 cups all-purpose flour

\n

1/4 cup corn flour

\n

1/4 cup oil

\n

2 tablespoons yogurt

\n

Salt

\n

Pinch of sugar

\n

1 teaspoon baking powder

\n

1 teaspoon active dry yeast

\n

About 1 1/4 cups warm water, or as needed

\n

\n

\n

Preparation:

Rub the flour with the other ingredients and gradually add warm water until a cohesive, soft dough forms...

\n

Divide the dough into small balls and cover with a damp cloth for about an hour.

\n

Mix a little white flour with a little corn flour and use it to roll out the dough balls. Roll all pieces until they are fairly thin and cover again with a cloth.

\n

Place a non-stick pan over low heat and cook the flatbreads on both sides, not browning them—about 2 minutes per side or until they lightly brown. Then cover the tortillas with a cloth to keep them soft and wrap them in a bread bag.

\n

Note: If corn flour isn’t available, substitute with white flour.

\n
