Note

You can replace two tablespoons of flour with 2 tablespoons fine semolina, 1 tablespoon cornstarch, and a pinch of baking soda. This way you get crisp qatayef.The tablespoon of cornstarch and the pinch of baking soda are essential, especially if we plan to fry the qatayef after filling them... to achieve the desired crispness.

Step 1

Blend the ingredients in a blender until you get a batter similar to crepe batter. It should not be too thick or too thin. Let it rest for about half an hour or a bit longer.
